Kids CAN Learn To Cook
Stay at home cooking lessons for ALL LEARNERS
This cooking blog began when Ben and Geoff from the book October Mornings in Salem, Massachusetts decided to share the recipes that they enjoy making while living in Salem - the Halloween Capital of the world.

Whether it is a crisp Fall October morning, a cold snowy day in winter, a breezy spring afternoon or a sun-filled day in summer - any day is a great day to cook. Join Ben and Geoff for cooking lessons to prepare fun, easy, and nutritious recipes that will be posted weekly.

#8 - DOLL SALAD

Ingredients:
1 canned pear half or peach half
4 small carrot sticks or celery sticks
Raisins
Piece of green, red or yellow pepper
Grated Cheese
Lettuce Leaf
Cucumber piece

Cooking Term of the Day:

Salad dressing – a sauce to flavor salads that typically consists of oil and
vinegar mixed together with herbs or other spices.

Ben and Geoff asked their mother to make their favorite salad dressing by mixing together olive oil, vinegar, garlic, salt, pepper, and a pinch of sugar.


How to Make It:
​

Place…the peach or pear half on a plate for the BODY.

Put... the cucumber slice at the top of the peach half for the HEAD.

Add… the carrot sticks or celery sticks for the ARMS and LEGS.

Place… the raisins on the cucumber piece for the EYES and NOSE.

Put… the pepper piece that has been cut into a smiley face on the
cucumber for the MOUTH.

Place…the grated cheese on top of the cucumber head for HAIR.

Lay... the lettuce piece on top of the legs for PANTS or a SKIRT.

Yield...1 salad

Serve…with your favorite salad dressing.

​Try using different vegetables for all parts of the body every time you
create your doll salad.

#7 - BLUEBERRY MUFFIN IN A MUG

Ingredients:
¼ cup of flour
2 tablespoons granulated sugar or 2 tablespoon of
brown sugar (you may use less sugar)
¼ teaspoon baking powder
1 tablespoon of canola oil or vegetable oil
3 tablespoons milk
2 tablespoons of fresh blueberries, frozen or canned.
pinch of cinnamon

Cooking Term of the Day:

Granulated – a form taking the part of grains or particles.

Ben showed his brother Geoff that the granulated sugar is used in the recipe instead of the powdered sugar.  

How to Make It: 

Place…flour, sugar, baking powder, oil and milk in your favorite microwave-safe mug.

Mix…with a fork until ingredients are moistened.

Add…blueberries and push them down part way into the
batter.

Sprinkle…with cinnamon.

Cook…in the microwave for 90 seconds. Let cool before
eating.

Yield…1 serving

For a sweet treat - drizzle a little maple syrup on top or
serve it as a dessert too – top with a bit of vanilla ice
cream or some whipped cream!

#6 - SOFT PRETZELS

Ingredients:
1 Package of Active Dry Yeast
¾ cup warm water
1 tablespoon sugar
½ teaspoon salt
2 cups flour
*egg for egg wash (optional)

Cooking Terms of the Day:

Knead - To fold and press dough with heel of hand.

Yeast - A leavening agent containing yeast cells used to raise dough in foods
such as bread, pizza, and pretzels.

Adrian’s mother showed Geoff how to knead the pizza dough by folding and
pressing it over and over again.

The students in Ben’s 5th grade science class mixed yeast with water as a
first step in the bread making process.

How to Make It:

Dissolve…yeast in warm water into a large mixing bowl.

Add… sugar and salt.

Add… flour slowly, enough to make dough stiff.

Knead…dough 5 minutes on a lightly floured board.

Divide… dough into 10 to 12 pieces.

Roll…each piece of dough into a 15-inch rope.

Shape…and tie.

Place…onto a greased cookie sheet.

*Break…egg into a small bowl and beat with a fork. Brush or spoon evenly
over pretzel.

Bake… for 12 to 15 minutes at 450 in a preheated oven.

You may want to sprinkle a little granulated salt or course sea salt on each
pretzel before baking. Serve with a little mustard on the side.

#5 - FRUIT SMOOTHIES

Ingredients:
1 cup of yogurt (plain or any flavor)
2 handfuls of blueberries OR 6 strawberries cut into halves
OR
​1 banana sliced (or use any combination of the above)
½ cup of apple juice OR cranberry juice OR orange juice

Cooking Term of the Day:

Puree – a smooth creamy substance made of crushed fruit or vegetables that is in the form of a liquid.

Ben showed his friend Cameron how to use a food processor to puree the fruit because he did not have a blender.

How to Make It: 

Puree…the yogurt and juice using a blender or food processor.

Add…the fruit you have chosen. Puree the mixture until you have a smooth liquid.

Pour…the liquid into glasses.

Yield…2 smoothies

You may chill the smoothies by adding ice to the empty glasses before pouring in the liquid. If you choose, add some extra fruit on top. You may want to use your favorite straw.

#4 - ANYTIME BURRITO

Ingredients:
1 egg
1 tablespoon milk
1 - 2 tablespoons salsa (any kind)
2 tablespoons of grated cheese or a cheese slice
1 8 inch tortilla (any kind)
1 pat of butter for frying pan

Cooking Terms of the Day:

Skillet – A frying pan.
Spatula – A wide flat blade for spreading and turning.

Aunt Mary used a spatula and a small skillet to scramble the eggs for Ben and Geoff.

How to Make It:

Break... egg into small mixing bowl.

Add... milk  

Beat... egg mixture with fork.

Place... butter or margarine in skillet; heat over medium heat until butter or margarine in melted.

Pour... egg mixture into the skillet. Gently scramble with wooden spoon or spatula until eggs look fairly dry
and fluffy.

Spread...tortilla with salsa, scrambled egg and cheese.

Roll... tortilla into a tight log-shape.

Enjoy your Anytime Burrito with your favorite fruit or
vegetable. If you like a little more egg, scramble two
eggs instead of one. It is tasty with a little sour cream on
the side and extra salsa.

#3 - FRUIT WITH YOGURT DIP

​Ingredients:
1 8-ounce container of Cool Whip (thawed)
1 8-ounce container of any flavor of yogurt
Variety fruits such as;
  • assorted melon
  • grapes
  • apples
  • pineapple
  • strawberries

Cooking Term of the Day:
​

Assorted –
consisting of various kinds.


​A new restaurant in Salem served assorted fruits to the
children visiting during Halloween weekend.

How to Make It:

Place…cool whip into medium mixing bowl.

Fold…in the yogurt until well blended.

Fill…a small bowl with the yogurt-cool whip mixture.

Refrigerate…until firm.

Cut…your favorite fruits into bite-size pieces.

Arrange…fruit around the outer circle of a plate or platter
and put the small bowl in the center for dipping.

Yield…a crowd.

Use tooth picks to pick up fruit pieces for dipping.
Remember – no double dipping if you are sharing.

#2 - ENGLISH MUFFIN PIZZAS

Ingredients:
1 english muffin split in half
4 tablespoons of jarred or regular tomato sauce
grated mozzarella, or any other grated cheese
OR
(1 slice can be used and cut into 4 strips)
Pinch of garlic powder (optional)
Pinch of oregano

Cooking Term of the Day:

Pinch – The very small amount of an ingredient that can be held between the finger and the thumb.

Geoff asked Ben to show him a pinch of garlic powder so that he could sprinkle it on his pizza.

How to Make It:

Toast… split english muffin.

Spread…tomato sauce onto each English muffin.

Place…grated cheese on top or a slice of cheese crisscross.

Pinch… oregano and garlic powder and sprinkle on top.

​Place…
on a microwave-safe plate. Heat around 30
seconds or until cheese melts.

Yield…1-2 servings

Serve your pizza with celery, carrot sticks or favorite fruit.

#1 - GRILLED CHEESE SANDWICH SHAPES

Ingredients:
2 slices of bread
softened butter or margarine
1 slice of cheese
Strawberries or any other fruit

​of the Day:


​Serrated – having a jagged or saw-like edge.

The cooking instructor showed Ben and Geoff the serrated knife that is used to cut bread.

How to Make It:

​Spread…bread with butter or margarine; put cheese in
between the 2 slices of buttered bread. Buttered side is on
the outside. Place sandwich buttered-side-down in skillet.

Cook… over medium heat until brown and cheese melts.

Turn…sandwich over; brown the other side. Place on
cutting board to cool a bit.

Trim…crusts off of bread with a serrated steak knife.
Keep crusts to snack on later.

Cut…out a shape using your favorite cookie cutter.

Place…shaped grilled cheese sandwich onto plate

Rinse…strawberries or other fruit, put on plate next to
sandwich

​Yield…1 serving

Don’t forget to eat your crusts and other pieces that are
left over.

LEARN THE COOKING TERMINOLOGY

Assorted – Consisting of various kinds.

Bake – To cook in the oven.

Baste – To brush liquid over food as it cooks.

Beat – To mix fast with beater or spoon.

Blend – To mix ingredients until smooth.

Boil – To cook until liquid bubbles.

Broil – to cook in the oven directly under heat of broiler.

Chill – To place in refrigerator to lower temperature of food.

Chop – To cut into small pieces.

Coat – To cover a food completely with flour or breadcrumbs.

Combine – To mix ingredients.

Cream – To beat until soft and fluffy.

Cube – To cut food into small pieces with 6 sides.

Cut in – to mix shortening with dry ingredients, using 2 knives.

Dice – To cut food into very small pieces, approximately the same size and shape.

Dot – To put small pieces of one food on top of another food, such as butter on top of casserole.

Drain – Pour off liquid or let it run off through the holes in a sieve or colander.

Firmly packed – To make sure ingredients, such as brown sugar, are packed into measuring cup tightly to get the correct amount.

Fold in – a gentle motion of slicing down through a mixture with a spoon, scraping the spoon across the bottom of the mixture, bringing it to the surface, using a fold over motion.

Freeze – To place in the freezer until set.

Fry – To cook in hot oil or shortening.

Grate – To rub on a food grater to break the food into fine pieces.

Grease – To rub the surface of the utensil with butter or shortening to prevent sticking.

Knead – To fold and press dough with heel of hand.

Melt – To heat until solid becomes liquid.

Mince – To cut into tiny pieces.

Mix – To stir ingredients together.

Pare or Peel - To remove outer skin.

Pinch – The very small amount of an ingredient that can be held between the finger and the thumb.

Puree – A smooth, creamy substance made of crushed fruit
or vegetables that is in the form a liquid.

Serrated – To have a jagged or saw-like edge.

Shred – To cut into thin strips with a shredder.

Shortening – Fats such as butter, margarine, lard and vegetable oil and solid.

Sift – To shake dry ingredients (flour, baking powder) through a sieve or sifter.

Simmer – To cook over low heat until the food barely bubbles.

Skillet – A frying pan.

Soften – To take food from refrigerator or freezer to let it get soft.

Spatula – A wide flat blade for spreading and turning.

Stir – To mix slowly with spoon or fork.

Whip – To beat very fast.

Yeast – A leavening agent containing yeast cells used to raise dough when making dough such as bread, pizza, and pretzels.

Yield – How much you will have when you finish
preparing your recipe.
